    Abstract
    This research is based on the Kenya catering industry, a case study of NAS Airport Services which caters for the worlds' airlines and all the ground service units within the Nairobi and Mombasa airport areas. This research was done to prove whether the theorists are correct when they state that organizations are affected by the environment in which they operate and that this environment brings challenges to these organizations. They also state that it is imperative for organizations to respond to these challenges in-order to survive. Using NAS Airport services as a case study I looked at the global and local challenges that have faced and continue to face the organization. Like the recent terrorist threats, high fuel prices and high costs of production. I also wanted to find out whether the organization responded to these challenges, and whether indeed the challenges have necessitated the rapid response by the organization in-order to survive in the catering industry. The organization has responded either strategically or operationally to the challenges they have faced. These responses have been responsible for the organizations growth, leadership position and survival in this unique field for the past 55years.
